After cooking your chicken, it’s vital to allow it to rest for about five to ten minutes before slicing. This resting period is essential as it lets the juices redistribute throughout the meat. If you cut into the chicken too soon, the juices will spill out, leading to dry, less flavorful pieces. To slice the chicken, use a sharp knife and cut against the grain. This technique results in tender, bite-sized pieces that will meld beautifully with the pasta and sauce.

Ingredients

2 boneless, skinless chicken breasts

2 cups broccoli florets

8 ounces fettuccine pasta

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, typically 8-10 minutes.

      - In the last 3 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli together, then set aside.

        Prepare the Chicken:

          - While the pasta is cooking, season the chicken breasts with salt, black pepper, and Italian seasoning on both sides.

            - Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

              - Add the chicken breasts and cook for about 7-8 minutes on each side, or until they reach an internal temperature of 165°F (75°C) and are golden brown. Remove the chicken from the skillet and let it rest for a few minutes before slicing into thin strips.

                Make the Alfredo Sauce:

                  - In the same skillet, lower the heat to medium and add the remaining tablespoon of olive oil.

                    - Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.

                      - Pour in the heavy cream, stirring to combine, and let it simmer for 2-3 minutes.

                        - Gradually whisk in the grated Parmesan cheese until smooth. Continue to cook for another 2-3 minutes until the sauce thickens slightly. Season with additional salt and pepper to taste.

                          Combine Ingredients:

                            - Add the cooked fettuccine and broccoli to the skillet with the Alfredo sauce, tossing gently to coat all the pasta and veggies evenly.

                              - Fold in the sliced chicken on top and let everything warm together for about 2 minutes.

                                Serve:

                                  - Divide the Chicken Alfredo and Broccoli onto plates. Garnish with freshly chopped parsley and extra Parmesan cheese if desired.
