Easy Cajun Shrimp Tacos

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 cup red cabbage, shredded

1 cup corn (fresh, frozen, or canned)

1 avocado, diced

1/2 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

8 small corn tortillas

1 lime, cut into wedges

Salt and pepper, to taste

Optional: hot sauce for serving

Marinate the Shrimp: In a medium bowl, toss the shrimp with Cajun seasoning, olive oil, and a pinch of salt and pepper. Let it marinate for about 15 minutes to soak up the flavors.

    Prepare the Toppings: While the shrimp is marinating, prepare the toppings. In a separate bowl, combine shredded red cabbage, corn, diced avocado, halved cherry tomatoes, and chopped cilantro. Toss gently to mix and set aside.

      Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, or until they turn pink and opaque. Do not overcook. Remove from heat.

        Warm the Tortillas: In a separate skillet, warm the corn tortillas for about 30 seconds on each side until they are pliable. You can also wrap them in foil and warm them in the oven if you prefer.
