2 cups cooked, shredded chicken (rotisserie chicken works great!)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 medium red onion, thinly sliced

1 cup corn (canned, frozen, or fresh)

1/4 cup chopped fresh cilantro (optional)

8 large flour tortillas

2 tablespoons olive oil

Sour cream for serving (optional)

Fresh lime wedges for serving (optional)

Mix the Chicken and BBQ Sauce: In a large bowl, combine the shredded chicken with BBQ sauce, ensuring all pieces are well-coated. Set aside.

    Prep the Tortillas: Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Once hot, place one tortilla in the skillet.

      Layer the Fillings: On one half of the tortilla, sprinkle a handful of cheddar cheese, followed by a layer of the BBQ chicken mixture, some corn, a few slices of red onion, and a sprinkle of Monterey Jack cheese. If using, add chopped cilantro on top for added flavor.

        Cook the Quesadilla: Carefully fold the tortilla in half over the fillings. Cook for about 3-4 minutes, or until the bottom is golden brown and crispy. Use a spatula to flip it over and cook the other side for another 3-4 minutes until the cheese melts and the tortilla is golden.

          Repeat: Remove the cooked quesadilla from the skillet and let it rest for a minute. Cut it into wedges. Repeat the process with the remaining tortillas and fillings, adding more olive oil to the skillet as needed.

            Serve: Serve the quesadillas warm with sour cream and lime wedges on the side for squeezing over.
