Easy BBQ Chicken Quesadillas for Dinner

Ingredients
  

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

4 large flour tortillas

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped (optional for garnish)

Cooking spray or olive oil for greasing the pan

Salsa and sour cream for serving (optional)

Instructions
 

Prep the BBQ Chicken Mixture: In a large bowl, combine the shredded chicken with the BBQ sauce until the chicken is evenly coated. Taste and adjust the seasoning if necessary. Set aside.

    Heat the Pan: Place a non-stick skillet over medium heat and lightly grease it with cooking spray or a drizzle of olive oil.

      Assemble the Quesadilla: Place one tortilla on the skillet. Sprinkle a generous layer of shredded cheddar and mozzarella cheese over half of the tortilla. Then layer with about 1/2 cup of the BBQ chicken mixture and a few pieces of chopped red onion. Fold the tortilla in half to cover the filling.

        Cook the Quesadilla: Cook for about 3-4 minutes on one side or until the bottom is golden brown and the cheese starts to melt. Carefully flip the quesadilla with a spatula and cook for another 3-4 minutes on the other side until crispy and golden.

          Repeat the Process: Remove the cooked quesadilla from the skillet and place it on a cutting board to rest. Repeat the assembly and cooking process with the remaining tortillas and filling.

            Slice and Serve: Cut each quesadilla into wedges. Garnish with freshly chopped cilantro if desired. Serve hot with salsa and sour cream on the side.
