Easy BBQ Chicken and Corn Quesadillas

2 cups cooked chicken, shredded (rotisserie chicken works great!)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup corn kernels (canned or fresh)

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1/2 medium red onion, thinly sliced

1 tablespoon olive oil

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Lime wedges (for serving)

Instructions
 

Prepare the Filling: In a large bowl, combine the shredded chicken, BBQ sauce, corn, and half of the cheese. Mix well to ensure everything is coated evenly.

    Sauté the Onions: In a skillet, heat the olive oil over medium heat. Add the sliced red onions and sauté until softened and slightly caramelized, about 5-7 minutes. Remove from heat and let cool briefly.

      Assemble the Quesadillas: On one half of each flour tortilla, spread a generous amount of the chicken and corn mixture. Top with the sautéed onions and the remaining cheese. Fold the other half of the tortilla over to cover the filling.

        Cook the Quesadillas: In the same skillet (no need to wipe it clean), heat a little more olive oil if necessary over medium-low heat. Place one or two quesadillas in the skillet (depending on size), cooking for about 3-4 minutes on each side, or until golden brown and the cheese is melted. Press down gently with a spatula for even cooking. Repeat with remaining quesadillas.

          Slice and Serve: Once cooked, remove the quesadillas from the skillet and let cool for a minute. Cut each quesadilla into wedges. Garnish with fresh cilantro and serve with sour cream or Greek yogurt and lime wedges on the side.
