Easy Baked Chicken Quesadillas

2 cups cooked chicken, shredded

1 cup cooked black beans (optional)

1 cup corn (fresh, frozen, or canned)

1 ½ cups shredded cheese (cheddar or a blend)

1 teaspoon taco seasoning

4 large flour tortillas

½ cup salsa (mild or spicy, based on preference)

2 tablespoons olive oil

Sour cream and guacamole for serving

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Chicken Mixture: In a large mixing bowl, combine the shredded chicken, black beans (if using), corn, shredded cheese, and taco seasoning. Stir until well mixed.

      Assemble Quesadillas: Lay one tortilla flat on a clean surface. Spread about ½ cup of the chicken mixture evenly over half of the tortilla. Drizzle a tablespoon of salsa on top of the mixture, then fold the other half of the tortilla over to create a half-moon shape.

        Brush with Olive Oil: Brush the top side of the quesadilla with olive oil to help it achieve a golden finish in the oven. Place the quesadilla on the prepared baking sheet. Repeat steps 3 and 4 for the remaining tortillas and filling.

          Bake Quesadillas: Bake the quesadillas in the preheated oven for about 10-12 minutes or until the tortillas are golden brown and the cheese has melted. Flip the quesadillas halfway through baking for even crispness.

            Slice and Serve: Once done, remove from the oven and let them cool for a couple of minutes. Cut each quesadilla into wedges for easier serving. Serve warm with sour cream and guacamole on the side.
