Ingredients

For the Cake:

2 ripe bananas, mashed

1 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

1 cup granulated sugar

½ cup brown sugar, packed

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk

1 cup semi-sweet chocolate chips

For the Chocolate Ganache:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

2 tablespoons unsalted butter

For the Banana Cream Frosting:

1 cup heavy whipping cream

2 ripe bananas, mashed

½ cup powdered sugar

1 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Cream Butter and Sugars: In another bowl, using a hand mixer or stand mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add Eggs and Bananas: Beat in the eggs one at a time, followed by the mashed bananas and vanilla extract until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing just until incorporated.

Fold in Chocolate Chips: Gently fold in the semi-sweet chocolate chips, ensuring they are evenly distributed in the batter.

Bake the Cakes: Divide the batter between the prepared cake pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Prepare the Ganache: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chopped chocolate and butter. Let sit for 2-3 minutes before stirring until smooth. Set aside to cool and thicken.

Make the Banana Cream Frosting: In a clean bowl, whip the heavy whipping cream until soft peaks form. Gradually add the powdered sugar and vanilla while continuing to whip until stiff peaks form. Gently fold in the mashed bananas until combined.

Assemble the Cake: Once the cakes have completely cooled, place one layer on a serving plate. Spread a generous layer of banana cream frosting on top. Place the second layer on top and pour the chocolate ganache over the cake, allowing it to drip down the sides.

Decorate and Serve: Optional: Garnish with additional banana slices or chocolate shavings. Slice and serve chilled or at room temperature for a delightful treat!
