Ingredients

1 pound fresh strawberries

8 oz cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon lemon juice

1/4 cup mini chocolate chips (optional)

Zest of 1 lemon (for garnish)

Fresh mint leaves (for garnish)

Instructions

Prepare the Strawberries: Rinse the strawberries under cold water and gently pat them dry with a paper towel. Cut a small slice off the bottom of each strawberry so they can stand upright.

Hollow Out the Strawberries: Using a paring knife, remove the green tops and carefully hollow out the center of each strawberry, making space for the filling. Be careful not to break the sides.

Make the Filling: In a medium bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and lemon juice. Using an electric mixer, beat the mixture on medium speed until smooth and creamy, about 2-3 minutes. If you like, fold in the mini chocolate chips for added texture and flavor.

Fill the Strawberries: Using a piping bag or a small spoon, fill each hollowed strawberry with the cream cheese mixture. You can create a nice swirl on top for presentation.

Garnish and Serve: Sprinkle the filled strawberries with lemon zest and top each with a fresh mint leaf for a burst of color and added freshness. Arrange them on a serving platter.

Chill and Enjoy: Refrigerate the filled strawberries for at least 30 minutes before serving to allow the flavors to meld and to keep them cool.

Prep Time: 20 minutes | Total Time: 50 minutes | Servings: 12-15 strawberries
