6 large eggs

2 tablespoons milk (or cream)

1/2 cup diced green bell pepper

1/2 cup diced onion

1/2 cup diced cooked ham (or turkey)

1/2 cup shredded sharp cheddar cheese

1 tablespoon unsalted butter

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Prep the Ingredients: Dice the green bell pepper, onion, and cooked ham into small pieces. Set aside.

    Whisk the Eggs: In a large mixing bowl, whisk the eggs and milk together until fully combined. Season with salt and pepper.

      Cook the Veggies: In a large non-stick skillet, melt the butter over medium heat. Add the diced onion and bell pepper, sautéing for about 3-4 minutes until softened and the onion is translucent.

        Add the Ham: Stir in the diced ham and cook for another 2-3 minutes until heated through.

          Scramble the Eggs: Pour the egg mixture into the skillet, gently stirring to incorporate the vegetables and ham. Allow the eggs to cook undisturbed for a minute, then gently stir and fold using a spatula. Keep cooking until the eggs are just set but still creamy, about 4-5 minutes.

            Cheese It Up: Once the eggs are nearly done, sprinkle the shredded cheddar cheese over the top. Cover the skillet with a lid for a minute to let the cheese melt.
