2 tablespoons olive oil

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 medium onion, diced

3 cloves garlic, minced

1 cup bell peppers, sliced (variety of colors for a vibrant dish)

2 cups low-sodium chicken broth

8 ounces egg noodles

1/4 cup soy sauce

1/4 cup honey

1 tablespoon rice vinegar

1 teaspoon ground ginger

1 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

1 cup snap peas, trimmed

1/4 cup green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and cook until they’re browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Sauté Vegetables: In the same pot, add the diced onion and garlic. Sauté for 2-3 minutes until the onion becomes translucent. Add the bell peppers and sauté for another 3 minutes until they start to soften.

      Combine Ingredients: Pour in the chicken broth, soy sauce, honey, rice vinegar, ground ginger, black pepper, and red pepper flakes (if using). Stir well to combine.

        Add Noodles: Bring the mixture to a boil, then add the egg noodles. Stir and reduce the heat to a simmer. Cover and let it cook for about 7-10 minutes or until the noodles are al dente.

          Add Chicken and Peas: Once the noodles are cooked, stir in the cooked chicken and snap peas. Cover again and cook for an additional 2-3 minutes until the peas are bright green and tender.

            Serve: Remove from heat and let it sit for a minute. Garnish with chopped green onions and sesame seeds before serving.
