For the Burger:

1 lb ground beef (preferably 80/20 for juiciness)

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

1/2 tsp black pepper

4 slices of aged Irish Cheddar cheese

4 brioche burger buns

2 tbsp butter (for toasting buns)

Fresh arugula or shredded lettuce

1 medium tomato, sliced

1/2 red onion, thinly sliced

For the Whiskey Sauce:

1/4 cup whiskey (Irish whiskey recommended)

1/2 cup beef broth

1/4 cup brown sugar

1 tbsp soy sauce

1 tbsp Worcestershire sauce

2 tbsp Dijon mustard

Salt and pepper to taste

Prepare the Whiskey Sauce: In a small saucepan over medium heat, combine whiskey, beef broth, brown sugar, soy sauce, Worcestershire sauce, and Dijon mustard. Bring to a simmer, then reduce heat to low and cook for 10-15 minutes until slightly thickened. Season with salt and pepper, then set aside.

    Make the Burger Patties: In a large bowl, combine ground beef, garlic powder, onion powder, salt, and black pepper. Mix until just combined (don’t overwork the meat). Form the mixture into 4 equal patties, making a slight indent in the middle of each burger to prevent puffing up during cooking.

      Cook the Patties: Preheat your grill or a skillet over medium-high heat. Cook the burger patties for about 4-5 minutes per side for medium-rare, or until your desired doneness. In the last minute of cooking, add a slice of Irish Cheddar cheese on each patty to melt.

        Toast the Buns: While the burgers are cooking, melt 2 tbsp of butter in a separate skillet over medium heat. Add the brioche buns, cut sides down, and toast until golden brown. This should take about 1-2 minutes.

          Assemble the Burgers: On the bottom half of each toasted bun, add a handful of arugula or lettuce, then place the cheese-topped burger patty on top. Top with a slice of tomato, a few rings of red onion, and a generous drizzle of the whiskey sauce. Close with the top half of the bun.
