2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 cup vegetable oil

4 large eggs

3 cups grated carrots (about 5 medium carrots)

1 cup crushed pineapple, drained

1 cup chopped walnuts (optional)

1 teaspoon vanilla extract

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

3-4 cups powdered sugar (adjust for desired sweetness)

1 teaspoon vanilla extract

Orange zest (from about half an orange, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until smooth. Stir in the grated carrots and crushed pineapple.

        Mix Together: Gradually add the wet mixture to the dry ingredients, mixing gently until just combined. If using walnuts, fold them in at this stage.
