1 ½ cups Biscoff cookies, crushed

½ cup unsalted butter, melted

2 tablespoons granulated sugar

16 oz cream cheese, softened

½ cup granulated sugar

½ cup Biscoff spread (plus more for drizzling on top)

2 large eggs

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the crushed Biscoff cookies, melted butter, and granulated sugar until the mixture resembles wet sand.

        - Press the mixture firmly into the bottom of a 9x9-inch baking dish lined with parchment paper for easy removal. Bake in the preheated oven for 10 minutes. Remove and let it cool while you prepare the filling.

          Make the Cheesecake Filling:

            - In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy.

              - Add in the granulated sugar and Biscoff spread; mix until well combined.

                - Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Scrape down the sides of the bowl as needed.

                  - Add the vanilla extract and a pinch of salt; mix until just combined.

                    Assemble the Bars:

                        - Bake in the oven for 30–35 minutes, or until the edges are set but the center still has a slight jiggle.

                          Cool and Chill:
