1 1/2 cups pitted Medjool dates (about 12-15 dates)

1/2 cup unsweetened almond butter (or any nut/seed butter)

1/4 cup cocoa powder (unsweetened)

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon pure vanilla extract

1 large egg (or flax egg for a vegan option)

1/2 cup dark chocolate chips (dairy-free for a vegan option)

Optional: 1/4 cup chopped nuts (walnuts or pecans)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by lining it with parchment paper or lightly greasing it.

    Blend the Dates: In a food processor, add the pitted dates and pulse until they form a sticky paste. If the dates are a bit dry, soak them in warm water for about 10 minutes and then drain before blending.

      Combine Ingredients: In the food processor with the date paste, add the almond butter, cocoa powder, baking soda, salt, vanilla extract, and the egg (or flax egg). Blend until the mixture is smooth and well combined, scraping down the sides as needed.

        Incorporate Chocolate Chips: Gently fold in the dark chocolate chips and chopped nuts (if using) with a spatula, ensuring that they are evenly distributed throughout the batter.

          Pour into Pan: Transfer the brownie batter into the prepared baking pan, spreading it evenly with a spatula. Smooth the top for an even finish.

            Bake: Place the pan in the preheated oven and bake for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter). Avoid overbaking for best texture.
