1/2 cup (120ml) heavy cream

1/4 cup (60ml) raspberry puree (fresh or frozen)

1 tsp vanilla extract

1/4 tsp sea salt

1/2 cup (50g) cocoa powder (for dusting)

1/4 cup (30g) crushed freeze-dried raspberries (for garnish)

Prepare the Raspberry Puree: If using fresh raspberries, blend them until smooth in a blender or food processor. For frozen raspberries, thaw them before blending. Strain the puree through a fine mesh sieve to remove seeds, if desired, and measure out 1/4 cup.

    Heat the Cream: In a small saucepan, gently heat the heavy cream over medium-low heat until it just begins to simmer. Watch carefully to prevent boiling.
