Ingredients

2 medium cucumbers, thinly sliced

1 cup fresh strawberries, hulled and quartered

1/4 red onion, thinly sliced

1/4 cup crumbled feta cheese (optional)

1/4 cup fresh mint leaves, chopped

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper to taste

Instructions

Prepare the Cucumbers: Start by washing the cucumbers thoroughly. Cut off the ends, and slice them thinly using a knife or a mandoline for even slices.

Slice the Strawberries: Rinse the strawberries under cold water, then hull them and cut them into quarters. Set aside.

Chop the Red Onion: Peel the red onion and slice it thinly. If you prefer a milder flavor, soak the slices in cold water for about 10 minutes, then drain.

Combine Ingredients: In a large bowl, gently toss together the cucumbers, strawberries, red onion, and chopped mint leaves. If using feta, sprinkle it over the top.

Make the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

Dress the Salad: Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.

Serve: Allow the salad to sit for about 10 minutes to let the flavors meld, then serve chilled for the best experience.
