8 slices of whole grain bread

1 large cucumber, thinly sliced

6-8 radishes, thinly sliced

4 ounces cream cheese (or vegan cream cheese), softened

2 tablespoons fresh dill, chopped

1 tablespoon fresh chives, chopped

1 tablespoon lemon juice

Salt and pepper to taste

A sprinkle of paprika (optional, for garnish)

Instructions
 

Prepare the Herb Cream Cheese: In a mixing bowl, combine the softened cream cheese, chopped dill, chives, lemon juice, salt, and pepper. Mix well until smooth and evenly mixed.

    Toast the Bread (optional): If you prefer a toasted sandwich, lightly toast the slices of whole grain bread until golden brown.

      Assemble the Sandwiches: Spread a generous layer of the herb cream cheese on one side of each slice of bread.

        Layer the Vegetables: On half of the slices, begin layering the cucumber slices evenly, followed by a layer of radish slices.
