2 medium cucumbers, diced

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder (optional)

1/4 teaspoon red pepper flakes (optional for a spicy kick)

Instructions
 

Start by preparing the vegetables. Dice the cucumbers and avocados into bite-sized pieces and place them in a large mixing bowl.

    Cut the cherry tomatoes in half and add them to the bowl along with the chopped red onion and cilantro.

      To prepare the dressing, in a small bowl, whisk together the lime juice, olive oil, sea salt, black pepper, garlic powder, and red pepper flakes until well combined.
