1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon minced fresh garlic

2 tablespoons nutritional yeast (optional)

Fresh herbs for garnish (e.g., parsley or cilantro)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

    Prepare the Chickpeas: After draining and rinsing the chickpeas, pat them dry with a clean kitchen towel. Removing excess moisture will help them become crispier.

      Season the Chickpeas: In a large mixing bowl, combine the dried chickpeas, olive oil, garlic powder, smoked paprika, ground cumin, salt, black pepper, and minced fresh garlic. Toss everything together until the chickpeas are evenly coated in the spice mixture.

        Spread on Baking Sheet: Transfer the seasoned chickpeas to the prepared baking sheet, spreading them out in a single layer without overcrowding. This will help them roast evenly and become nice and crunchy.

          Roast the Chickpeas: Place the baking sheet in the oven and roast for 25-30 minutes, shaking the pan halfway through to ensure even cooking. Keep an eye on them towards the end, as cooking times may vary depending on your oven.
