Ingredients

3 cups rolled oats

1 cup almonds, chopped

1/2 cup sunflower seeds

1/2 cup shredded coconut (unsweetened)

1/2 cup honey

1/4 cup coconut oil, melted

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

1/2 cup dried fruits (like cranberries, raisins, or apricots), optional

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This ensures an even bake for your granola.

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped almonds, sunflower seeds, shredded coconut, cinnamon, and salt. Stir them together to combine evenly.

Prepare Wet Ingredients: In a separate bowl, whisk together the honey, melted coconut oil, and vanilla extract until well combined.

Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir well until all the dry ingredients are coated evenly with the honey and oil mixture.

Spread on Baking Sheet: Line a baking sheet with parchment paper. Spread the granola mixture evenly on the sheet. Press it down firmly with the back of a spatula to help it get crunchy.

Bake the Granola: Place in the preheated oven and bake for 20-25 minutes, stirring halfway through. Keep an eye on it; you want it a lovely golden brown. If using dried fruits, add them in the last 5 minutes of baking.

Cool Down: Once it’s baked, remove the granola from the oven and let it cool completely on the baking sheet. This helps it get extra crunchy as it cools.

Store: Once cooled, break the granola into clusters and store it in an airtight container. It’ll stay fresh for up to two weeks (if it lasts that long!).

Serve and Enjoy: Enjoy your crunchy granola with yogurt, milk, or simply as a snack! Add fresh fruits or toppings as desired.
