1 cup all-purpose flour

2 large eggs

1 cup shredded coconut (sweetened or unsweetened, based on your preference)

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp paprika

Salt and pepper, to taste

1/2 cup sweet chili sauce (for dipping)

Fresh lime wedges (for serving)

Prepare the Shrimp: Pat the shrimp dry with paper towels. This will help the coating stick better. Season lightly with salt and pepper.

    Set up the Bread Station: In one bowl, place the flour mixed with garlic powder, paprika, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, combine the shredded coconut and panko breadcrumbs.

      Coat the Shrimp: Dredge each shrimp in the flour mixture, shaking off the excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, roll the shrimp in the coconut-panko mixture, pressing lightly to ensure the coating sticks well.

        Fry the Shrimp: In a large skillet or deep pot, heat about 1 inch of oil over medium-high heat. When hot (around 350°F or 175°C), carefully add the shrimp in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes per side or until golden brown and crispy. Use a slotted spoon to transfer cooked shrimp to a paper towel-lined plate to drain excess oil.
