Crunchy BBQ Cauliflower Wraps

1 medium head of cauliflower, cut into florets

1 cup breadcrumbs (panko for extra crunch)

1 cup BBQ sauce (your favorite brand)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon onion powder

Salt and pepper, to taste

4 large whole wheat wraps or tortillas

1 cup shredded lettuce

1 medium tomato, diced

1/2 cup red onion, thinly sliced

1/2 cup shredded cheese (cheddar or a vegan alternative)

Instructions
 

Preheat the oven: Begin by preheating your oven to 425°F (220°C).

    Prepare the cauliflower: In a large bowl, toss the cauliflower florets with olive oil, garlic powder, smoked paprika, onion powder, salt, and pepper until evenly coated.

      Coat with breadcrumbs: Spread the breadcrumbs on a plate. Roll each cauliflower floret in the breadcrumbs until fully coated. This will create a crunchy exterior once baked.

        Bake the cauliflower: Arrange the breaded cauliflower loosely on a baking sheet lined with parchment paper. Bake for about 25-30 minutes, flipping halfway, until golden brown and crispy.

          Glaze with BBQ sauce: Remove the cauliflower from the oven and drizzle with the BBQ sauce. Toss gently to ensure all pieces are coated. Return to the oven for an additional 5-7 minutes to let the sauce caramelize.

            Assemble the wraps: Lay a tortilla flat on a clean surface. Begin by layering some shredded lettuce, followed by the BBQ cauliflower, diced tomato, red onion, and sprinkle of cheese.

              Wrap it up: Fold in the sides of the tortilla, then roll from one end to the other tightly. Repeat for the remaining tortillas.
