1 can (15 oz) chickpeas, drained and rinsed

1 small red onion, roughly chopped

3 cloves garlic, minced

1 cup fresh parsley, chopped

1 cup fresh cilantro, chopped

1 tsp cumin powder

1 tsp coriander powder

½ tsp paprika

½ tsp baking powder

1 tsp salt

½ tsp black pepper

1 tbsp tahini

2 tbsp lemon juice

2 tbsp olive oil (plus more for drizzling)

¾ cup breadcrumbs (preferably whole wheat)

Optional: ¼ tsp cayenne pepper for heat

Instructions
 

Prep the Chickpeas: Preheat your oven to 400°F (200°C). In a food processor, add the drained chickpeas. Pulse them a few times until they are roughly chopped (do not puree).

    Combine Ingredients: Add the chopped red onion, minced garlic, parsley, cilantro, cumin, coriander, paprika, baking powder, salt, black pepper, tahini, lemon juice, and olive oil to the food processor. Pulse again until the mixture is combined but still chunky. Scrape down the sides as needed to ensure even mixing.

      Add Breadcrumbs: Transfer the mixture to a mixing bowl and fold in the breadcrumbs. If using, sprinkle in the cayenne pepper for an extra kick. Mix until everything is well combined. You want a texture that holds together; if it's too wet, add a bit more breadcrumbs.

        Shape the Falafel: Using your hands, form small balls (about the size of a golf ball) or patties. Place them on a baking sheet lined with parchment paper. Make sure to leave some space between each ball.

          Drizzle with Olive Oil: Lightly drizzle olive oil over the falafel balls for that extra crunchiness when baked.

            Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, flipping halfway through, until they are golden brown and crispy on the outside.
