4 green onions, sliced

1/2 cup fresh cilantro leaves, chopped

1/2 cup unsalted peanuts, roughly chopped

1/4 cup sesame seeds, toasted

For the Dressing:

1/4 cup rice vinegar

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 teaspoon fresh ginger, grated

1 clove garlic, minced

Salt and pepper to taste

Prepare the Veggies: In a large mixing bowl, combine the green cabbage, red cabbage, carrots, snap peas, bell peppers, green onions, and cilantro. Toss the vegetables gently to mix them evenly.
