Crunchy Air-Fried Cauliflower Bites

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional, for heat)

1 tsp salt

1/2 tsp black pepper

1 cup buttermilk (or plant-based milk + 1 tbsp vinegar for a vegan option)

1 cup breadcrumbs (panko for extra crunch)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Cauliflower: Rinse the cauliflower florets and pat them dry with a kitchen towel. This helps them crisp up better during frying.

    Make the Breading Station: In a large bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. In another bowl, pour in the buttermilk. Set a third bowl aside for the breadcrumbs.

      Coat the Cauliflower: Dip each cauliflower floret first into the flour mixture, shaking off excess, then into the buttermilk, allowing any extra liquid to drip off, and finally into the breadcrumbs, pressing gently to ensure they stick.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Air-Fry: Lightly spray the air fryer basket with cooking spray or olive oil. Arrange the cauliflower bites in a single layer in the basket, making sure they aren’t crowded (you may need to do this in batches). Lightly spray the tops with more olive oil for added crispiness.

            Cooking Time: Air-fry the cauliflower bites for 12-15 minutes, shaking the basket halfway through to ensure even cooking. The bites should be golden brown and crispy.

              Serve: Once cooked, remove the cauliflower bites from the air fryer and sprinkle with chopped parsley. Serve hot with your favorite dipping sauce, such as ranch or a spicy aioli.
