Crockpot Creamy Turkey Chili

1 pound ground turkey

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) cannellini beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

2 cups low-sodium chicken broth

1 cup corn (fresh, frozen, or canned)

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

½ cup cream cheese

1 cup shredded cheddar cheese (plus more for serving)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Sauté the Turkey: In a skillet over medium heat, brown the ground turkey until no longer pink. Drain excess fat and transfer to the crockpot.

    Add Veggies: To the crockpot, add the diced onion, minced garlic, and diced bell pepper.

      Mix in Beans and Tomatoes: Stir in the cannellini beans, black beans, diced tomatoes (with their juices), and corn.

        Season It Up: Add the chicken broth, chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir everything together so the spices are well distributed.

          Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 4 hours.

            Make it Creamy: About 30 minutes before serving, stir in the cream cheese until melted and fully combined. Then, mix in the shredded cheddar cheese until melted and creamy.
