4 boneless, skinless chicken breasts

1 can (28 oz) crushed tomatoes

1 cup heavy cream

1 medium onion, diced

4 cloves garlic, minced

1 cup fresh basil leaves, chopped (plus additional for garnish)

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional for a kick)

1 tablespoon olive oil

1 cup grated Parmesan cheese

Cooked pasta or rice, for serving

Prepare the Chicken: Season the chicken breasts with salt, black pepper, and red pepper flakes. In a large skillet, heat the olive oil over medium heat. Sear the chicken breasts for 3-4 minutes on each side until brown (this step is optional but adds flavor).

    Combine Ingredients in the Crockpot: In your slow cooker, combine the crushed tomatoes, diced onion, minced garlic, dried oregano, and half of the chopped basil. Stir well to combine.

      Add the Chicken: Place the seared (or raw) chicken breasts on top of the tomato mixture. Cover the chicken with the remaining chopped basil.

        Cook the Chicken: Cover the crockpot and set it on low heat for 6-8 hours or high heat for 3-4 hours, until the chicken is fully cooked and tender.

          Make it Creamy: About 30 minutes before serving, remove the chicken from the pot and set aside. Stir in the heavy cream and grated Parmesan cheese into the tomato mixture. Allow to simmer for 30 minutes on high, uncovered.

            Shred the Chicken: Once the creamy tomato sauce has thickened slightly, shred the chicken using two forks and mix it back into the sauce.
