Crockpot Chili Chicken Sliders

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet chili seasoning mix (or homemade)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup chicken broth

1 tablespoon olive oil

Salt and pepper to taste

12 slider rolls (mini burger buns)

1 cup shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional)

Prepare the Chicken: In a skillet over medium heat, add olive oil. Once hot, season the chicken breasts with salt and pepper. Sear the chicken on both sides for about 3-4 minutes until lightly browned. Remove from heat.

    Combine Ingredients in Crockpot: Place the seared chicken breasts at the bottom of the crockpot. Add the chopped onion, minced garlic, black beans, corn, diced tomatoes (with juices), chili seasoning, and chicken broth. Stir gently to mix the ingredients evenly.

      Cook the Chicken: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easy to shred.

        Shred the Chicken: Once cooked, remove the chicken breasts and place them on a cutting board. Use two forks to shred the chicken into bite-sized pieces, then return the shredded chicken back to the crockpot. Stir everything together to combine and let it absorb the flavors for another 10-15 minutes on warm.

          Assemble the Sliders: Slice the slider rolls in half. Spoon the chili chicken mixture onto the bottom half of each slider roll, then top with shredded cheddar cheese.

            Melt the Cheese: You can briefly place the assembled sliders on a baking sheet and broil them in the oven for 2-3 minutes until the cheese is melted and bubbly.
