2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon cornstarch

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: fresh herbs (like rosemary or thyme) for garnish

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Wash and peel the sweet potatoes. Cut them into thin, even matchsticks, about 1/4 inch thick.

      In a large bowl, toss the sweet potato sticks with olive oil, ensuring they are evenly coated.

        Sprinkle the cornstarch, paprika, garlic powder, onion powder, salt, and black pepper over the sweet potatoes. Toss again until all the fries are well-seasoned and coated.

          Spread the sweet potato fries in a single layer on the prepared baking sheet. Make sure they are not overcrowded to achieve maximum crispiness.

            Bake in the preheated oven for 25-30 minutes, flipping halfway through until they are golden brown and crispy.

              Once done, remove from the oven and let them cool for a few minutes. Optional: garnish with fresh herbs if desired.
