2 medium sweet potatoes, peeled and cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for heat)

1/4 cup grated Parmesan cheese (optional for a cheesy flavor)

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    In a large mixing bowl, toss the sweet potato cubes with olive oil until evenly coated.

      Add garlic powder, smoked paprika, ground cumin, salt, black pepper, and cayenne pepper (if using) to the bowl. Mix well to ensure all the sweet potatoes are coated with the seasonings.

        Spread the sweet potato cubes in a single layer on the prepared baking sheet. Make sure to leave enough space between the pieces to allow for even crispiness.

          Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the sweet potatoes are crispy and golden brown on the edges.

            If you'd like to add a cheesy flavor, sprinkle grated Parmesan cheese over the sweet potato bites during the last 5 minutes of baking.

              Once done, remove from the oven and let cool slightly. Garnish with chopped fresh chives or parsley before serving.
