Crispy Smashed Potatoes

1.5 pounds baby potatoes (Yukon Gold or red)

4 tablespoons olive oil

1 teaspoon kosher salt

½ teaspoon black pepper

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 teaspoon smoked paprika

2 tablespoons freshly grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (230°C).

    Boil the Potatoes: Place the baby potatoes in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil, then reduce the heat to a simmer. Cook for about 15-20 minutes or until the potatoes are tender when pierced with a fork.

      Drain and Cool: Drain the potatoes and let them sit for a few minutes until cool enough to handle.

        Smash the Potatoes: Line a baking sheet with parchment paper. Transfer the potatoes to the sheet and use a potato masher or the bottom of a glass to gently smash each potato until it’s about ½ inch thick.

          Season the Potatoes: In a small bowl, whisk together the olive oil, salt, black pepper, minced garlic, rosemary, and smoked paprika. Drizzle the mixture over the smashed potatoes, making sure to coat each one.

            Bake the Potatoes: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the potatoes are golden brown and crispy.

              Add Cheese (Optional): If using Parmesan cheese, sprinkle it over the potatoes in the last 5 minutes of baking for an extra cheesy touch.
