4 salmon fillets (6 oz each, skin on)

1/4 cup honey

1/4 cup soy sauce (low sodium preferred)

4 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon rice vinegar

1 teaspoon freshly grated ginger

1/2 teaspoon crushed red pepper flakes (optional for heat)

Salt and pepper, to taste

1 lb asparagus, trimmed

1 cup cherry tomatoes, halved

Sesame seeds for garnish

Chopped green onions for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easy cleanup.

    Prepare the Marinade: In a medium bowl, whisk together the honey, soy sauce, minced garlic, olive oil, rice vinegar, grated ginger, and crushed red pepper flakes. Set aside half of this mixture for drizzling later.

      Marinate the Salmon: Place the salmon fillets in a shallow dish or a zip-lock bag. Pour the marinade over the salmon, ensuring it's well-coated. Let it marinate in the refrigerator for at least 20 minutes for the best flavor.

        Prepare the Vegetables: While the salmon marinates, toss the asparagus and cherry tomatoes with a drizzle of olive oil, salt, and pepper in a separate bowl.

          Arrange on the Sheet Pan: Remove the salmon from the marinade and place it skin-side down on one side of the prepared sheet pan. On the other side, arrange the asparagus and cherry tomatoes in a single layer.

            Bake: Place the sheet pan in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp. For an extra crispy finish, switch the oven to broil for the last 2-3 minutes, keeping a close eye to avoid burning.

              Drizzle and Garnish: Once out of the oven, drizzle the reserved marinade over the salmon. Sprinkle sesame seeds and chopped green onions over the top for extra flavor and presentation.
