Crispy Potsticker Salad with Zesty Sesame Dressing

12 frozen potstickers (chicken or vegetable)

4 cups mixed salad greens (spinach, arugula, and romaine)

1 cup shredded carrots

1 cup cucumber, thinly sliced

½ cup red cabbage, thinly sliced

¼ cup green onions, chopped

¼ cup fresh cilantro, chopped

1 tbsp sesame seeds, toasted (for garnish)

For the Zesty Sesame Dressing:

3 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp sesame oil

1 tbsp honey or maple syrup

1 tsp grated fresh ginger

1 clove garlic, minced

1 tsp Sriracha or chili garlic sauce (optional for heat)

Salt and pepper to taste

Cook the Potstickers: Begin by cooking the frozen potstickers according to the package instructions. This usually involves pan-frying with a little oil until they are golden brown and crispy on one side, then adding water and steaming until cooked through. Set aside.

    Prepare the Vegetables: While the potstickers are cooking, wash and chop the salad greens, shredded carrots, cucumber, and red cabbage. Place them in a large salad bowl.

      Make the Dressing: In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, minced garlic, and Sriracha (if using). Taste and season with salt and pepper according to your preference. Adjust the thickness by adding a little more oil or vinegar if needed.

        Assemble the Salad: Once the potstickers are cooked and slightly cooled, add them to the salad bowl with the mixed greens and veggies. Drizzle the zesty sesame dressing over the top.
