Crispy Pepper Jack Potato Bombs

2 large russet potatoes

1 cup pepper jack cheese, shredded

1/2 cup cream cheese, softened

1/2 cup green onions, chopped

1/4 cup crispy bacon bits (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup all-purpose flour

2 eggs, beaten

1 1/2 cups breadcrumbs (Panko for extra crunch)

Vegetable oil (for frying)

Instructions
 

Cook the Potatoes: Wash and scrub the russet potatoes. Place them in a large pot, cover with water, and bring to a boil. Cook for about 15-20 minutes, or until fork-tender. Drain and let them cool slightly before handling.

    Prepare the Filling: In a large mixing bowl, mash the cooked potatoes (with skins removed) until smooth. Add the pepper jack cheese, cream cheese, green onions, bacon bits (if using), garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined and set aside.

      Shape the Bombs: Take a handful of the potato mixture and form it into a ball (about the size of a golf ball). Press a small indentation in the center and place a teaspoon of extra pepper jack cheese into the indentation. Seal the potato mixture around the cheese, rolling it back into a ball. Repeat the process until all the potato mixture is used.

        Setup Breading Station: Prepare three shallow bowls — one with flour, one with the beaten eggs, and one with breadcrumbs.

          Bread the Potato Bombs: Roll each potato ball first in flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Make sure each one is evenly coated. Place them on a baking sheet as you go.

            Heat the Oil: In a heavy skillet or frying pan, heat about 2 inches of vegetable oil over medium-high heat until hot (around 350°F or 175°C).

              Fry the Bombs: Carefully add a few potato bombs at a time to the hot oil (don’t overcrowd the pan). Fry for 4-5 minutes, turning occasionally, until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

                Serve: Allow the bombs to cool slightly before serving. For an extra kick, pair them with a spicy dipping sauce or salsa.
