1 tablespoon brown sugar

1 teaspoon cinnamon

8 small corn tortillas

1 cup shredded cabbage (green or purple for color)

1 avocado, sliced

1/2 cup crumbled feta or goat cheese (optional)

Fresh cilantro leaves for garnish

Prepare the Peaches: In a bowl, combine the sliced peaches, olive oil, brown sugar, cinnamon, and salt. Toss until the peaches are well coated. Allow them to marinate for at least 15 minutes.
