Ingredients

4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Olive oil or cooking spray for baking

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with olive oil.

Prep the Chicken: Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness, about 1/2 inch.

Prepare the Coating: In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, dried herbs, salt, and pepper. Mix well until all ingredients are evenly distributed.

Egg Wash: In another bowl, beat the eggs until well combined.

Coat the Chicken: Dip each chicken breast first into the beaten eggs, ensuring it is well-coated. Then, transfer it to the breadcrumb mixture, pressing down to help the coating adhere. Make sure each piece is completely covered.

Arrange on Baking Sheet: Place the coated chicken breasts on the prepared baking sheet, ensuring they are spaced apart for even cooking.

Add Olive Oil: Lightly spray the tops of the chicken with cooking spray or drizzle with olive oil. This helps achieve a golden and crispy crust.

Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C) and the coating is crispy and golden.

Garnish and Serve: Once done, remove the chicken from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley if desired, and serve warm with your favorite sides like roasted vegetables or a fresh salad.
