Preheating your oven is a crucial step in ensuring your chicken wings come out crispy and delicious. The ideal temperature for baking Buffalo chicken wings is 425°F (220°C). This high temperature helps to render the fat from the chicken skin, allowing it to crisp up beautifully while locking in moisture. A properly preheated oven also ensures even cooking throughout the wings, so you avoid undercooked or soggy spots. Make sure to give your oven at least 15-20 minutes to reach the desired temperature before placing the wings inside.

Ingredients

2 pounds chicken wings

2 tablespoons baking powder

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 cup buffalo sauce (store-bought or homemade)

2 tablespoons unsalted butter, melted

Fresh parsley, chopped (for garnish)

Celery sticks (for serving)

Blue cheese or ranch dressing (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Place a wire rack on a baking sheet to allow the wings to crisp evenly on all sides.

Prepare the Wings: If not already done, pat the chicken wings dry with paper towels to remove any excess moisture. This step is crucial for achieving that crispy texture.

Season: In a large bowl, toss the wings with baking powder, salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper until they’re evenly coated.

Arrange on Rack: Place the seasoned wings in a single layer on the wire rack, ensuring they do not touch each other. This allows air to circulate and helps them crisp up.

Bake: Bake in the preheated oven for 40-45 minutes, flipping the wings halfway through, until they are golden brown and crispy.

Make Buffalo Sauce: While the wings are baking, combine the hot sauce and melted butter in a small bowl. Whisk until fully blended.

Toss in Sauce: Once the wings are done baking, remove them from the oven and let them rest for a few minutes. Then, transfer them to a large bowl and pour the buffalo sauce over the top. Gently toss until the wings are evenly coated.

Serve: Plate the wings and garnish with chopped parsley. Serve with celery sticks and your choice of blue cheese or ranch dressing for dipping.
