2 medium zucchinis, grated

1 teaspoon salt (for draining zucchini)

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

1 large egg

1/4 cup green onions, finely sliced

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1/2 lemon

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1/4 cup fresh parsley, chopped (for garnish)

Prep the Zucchini: Start by grating the zucchinis using a box grater. Place the grated zucchini in a clean dish towel or cheesecloth, sprinkle with salt, and let it sit for about 10-15 minutes. This will help to draw out excess moisture.

    Remove Excess Water: After the resting period, gather the towel or cheesecloth and twist it tightly to squeeze out as much liquid from the zucchini as possible. This step is crucial for getting your fritters crispy!

      Mix the Batter: In a large mixing bowl, combine the drained zucchini, flour, grated Parmesan cheese, egg, scallions, garlic, lemon zest, lemon juice, black pepper, and red pepper flakes (if using). Stir until everything is well incorporated.
