1 cup cornmeal

1-2 fresh jalapeños, finely chopped (adjust to your spice preference)

2 large eggs

1 tablespoon olive oil

Preheat Oven: Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper for easy cleanup and crispier chips.

    Prepare Zucchini: Wash and dry the zucchinis. Slice them into thin rounds (about 1/4 inch thick) to ensure they crisp up nicely.

      Mix Dry Ingredients: In a medium mixing bowl, combine the cornmeal, all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir in the chopped jalapeños until evenly distributed.

        Prepare Egg Wash: In a separate bowl, beat the eggs and mix in the olive oil until well combined.

          Coat the Zucchini: Dip each zucchini slice into the egg wash, making sure it's covered, then dredge it in the dry mixture, pressing gently to adhere. Place the coated zucchini chips on the prepared baking sheets in a single layer.
