1 cup fresh jalapeños, seeds removed and finely chopped

1 cup sharp cheddar cheese, shredded

½ cup cream cheese, softened

¼ cup all-purpose flour

1 large egg, beaten

1 cup panko breadcrumbs

1 tsp garlic powder

1 tsp onion powder

½ tsp smoked paprika

½ tsp salt

½ tsp black pepper

Prepare the Jalapeños: Begin by washing the jalapeños. Cut them in half lengthwise and remove the seeds (for less heat) or keep them if you want a spicier bite. Finely chop the peppers and set them aside.

    Mix the Cheese Filling: In a medium bowl, combine the chopped jalapeños, shredded cheddar cheese, cream cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined. This will be your filling.

      Form the Bites: Scoop about a tablespoon of the jalapeño cheese mixture and shape it into a small ball (or slightly flat patty, if desired). Repeat until all the mixture is used. Place the formed bites on a tray lined with parchment paper.

        Prepare Breading Station: In one shallow dish, place the all-purpose flour. In a second dish, beat the egg. In a third dish, place the panko breadcrumbs.

          Bread the Bites: Take each jalapeño cheese ball and first coat it in flour, shaking off any excess. Then dip it into the beaten egg, allowing any excess to drip off. Finally, roll the ball in the panko breadcrumbs, pressing gently to adhere. Repeat until all bites are breaded.

            Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil to 350°F (175°C). You can test the oil’s readiness by dropping a breadcrumb in; it should sizzle and rise to the surface.

              Fry the Bites: Carefully drop the breaded jalapeño bites into the hot oil in small batches. Fry them for about 3-4 minutes, or until they are golden brown and crispy. Make sure not to overcrowd the pan to maintain the oil temperature.

                Drain and Serve: Once cooked, use a slotted spoon to transfer the bites to a plate lined with paper towels to drain excess oil. Serve hot, garnished with your favorite dipping sauce – sour cream, ranch, or guacamole go exceptionally well!
