1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

1 cup panko breadcrumbs

2 large eggs

1 cup cornstarch

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon paprika

½ cup honey

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 tablespoon sesame oil (or vegetable oil)

Freshly chopped green onions and sesame seeds for garnish (optional)

Cooking oil for frying

Prep the Chicken: In a large mixing bowl, season the chicken pieces with salt, black pepper, garlic powder, onion powder, and paprika. Set aside to marinate for 15 minutes.

    Prepare the Coating Stations: Set up three separate shallow dishes:

      - In the first dish, add the cornstarch.

        - In the second dish, beat the eggs until well combined.

          - In the third dish, mix together the flour and panko breadcrumbs.

            Coat the Chicken: Dip each chicken piece first into the cornstarch, ensuring it is completely coated. Shake off any excess. Next, dip the chicken into the beaten eggs, allowing any excess to drip off. Finally, dredge the chicken in the flour and panko mixture, pressing gently to adhere. Set aside on a plate.

              Make the Honey Garlic Sauce: In a small saucepan over medium heat, combine the honey, minced garlic, soy sauce, apple cider vinegar, and sesame oil. Bring to a simmer while stirring constantly, and let it cook for about 3-5 minutes until slightly thickened. Remove from heat and set aside.

                Fry the Chicken Bites: In a large skillet or deep fryer, heat enough cooking oil to submerge the chicken bites (about 1-2 inches deep) over medium-high heat. Once the oil is hot (about 350°F or 175°C), carefully place a few chicken pieces in the oil without overcrowding the pan. Fry until golden brown and crispy, about 4-5 minutes per side. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

                  Toss in the Sauce: In a clean mixing bowl, add the crispy chicken bites and pour the honey garlic sauce over the top. Toss gently to coat each piece evenly in the sauce.

                    Serve: Plate the honey garlic chicken bites and garnish with freshly chopped green onions and a sprinkle of sesame seeds if desired. Serve with steamed rice or a fresh salad for a complete meal.
