To elevate the flavor of your crispy halloumi taco lettuce wraps, marinating the halloumi is essential. Start by preparing a spice mix that enhances the natural saltiness and unique texture of the cheese. A great blend includes smoked paprika, ground cumin, garlic powder, and a pinch of cayenne for heat. Combine these spices in a bowl, then drizzle in a few tablespoons of high-quality olive oil. The oil not only helps the spices adhere to the halloumi but also ensures that the cheese crisps up beautifully when cooked.

Ingredients

250g halloumi cheese, sliced into thin strips

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 head of romaine lettuce or butter lettuce, leaves separated

1 cup cherry tomatoes, halved

1 avocado, diced

¼ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Hot sauce (optional)

Instructions

Prepare the Halloumi: In a medium bowl, mix the olive oil, cumin, smoked paprika, garlic powder, salt, and pepper. Add the halloumi strips and toss until they are well coated in the spice mix.

Crisp the Halloumi: Heat a non-stick skillet over medium heat. Once hot, add the halloumi strips in a single layer. Cook for about 2-3 minutes on each side, or until golden brown and crispy on the outside. Remove from heat and set aside.

Assemble the Lettuce Wraps: Take a lettuce leaf and place a few strips of crispy halloumi in the center. Top with cherry tomatoes, diced avocado, red onion, and fresh cilantro.

Finish and Serve: Squeeze fresh lime juice over each taco and, if desired, drizzle with hot sauce for an extra kick. Serve immediately and enjoy your vibrant wraps!
