2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 tablespoon chopped fresh parsley (for garnish)

Olive oil spray (for baking)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash the zucchinis and cut off the ends. Slice each zucchini into fries, approximately 1/4 inch thick. You can cut them into long strips, and then half them for shorter sizes if you prefer.

      Set up Dredging Stations: In a shallow bowl, whisk the eggs until they are well-beaten. In another shallow dish, mix together the breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and black pepper.

        Coat the Zucchini Fries:
