4 bone-in pork chops (about 1 inch thick)

1 cup all-purpose flour

2 cups panko breadcrumbs

1 cup grated Parmesan cheese

4 cloves garlic, minced

2 teaspoons dried Italian herbs (oregano, basil, or thyme)

2 large eggs

1/4 cup milk

Salt and pepper, to taste

1/2 teaspoon paprika

Olive oil, for frying

Fresh parsley, chopped (for garnish)

Prepare the Pork Chops: Pat the pork chops dry with paper towels. Season both sides with salt, pepper, and paprika. Allow them to sit at room temperature for about 15 minutes.

    Set Up the Breading Station: In three separate shallow bowls, set up your breading station. In the first bowl, add the flour. In the second bowl, whisk together the eggs and milk until well combined. In the third bowl, mix the panko breadcrumbs, grated Parmesan cheese, minced garlic, and dried Italian herbs.

      Bread the Chops: Dredge each pork chop in the flour, shaking off any excess. Dip it into the egg mixture, letting any excess drip off, then coat it well in the panko-Parmesan mixture, pressing gently to ensure the breadcrumbs adhere.

        Fry the Chops: In a large skillet, heat about 1/2 inch of olive oil over medium heat. Once the oil is hot (you can test it by dropping a breadcrumb in; it should sizzle), carefully place the breaded pork chops in the skillet. Cook for about 4-5 minutes on each side, or until golden brown and crispy. Make sure the internal temperature of the pork reaches 145°F (63°C).

          Drain and Rest: Once cooked, remove the pork chops from the skillet and place them on a plate lined with paper towels to drain any excess oil. Let them rest for a few minutes.

            Serve: Garnish the crispy pork chops with fresh chopped parsley. Serve them hot with a side of your choice, such as mashed potatoes, a fresh salad, or steamed vegetables.
