4 large russet potatoes

4 cloves of garlic, minced

1 tablespoon dried oregano

1 tablespoon dried thyme

2 teaspoons smoked paprika

1 teaspoon sea salt

½ teaspoon black pepper

¼ cup olive oil

Fresh parsley, chopped (for garnish)

Optional: freshly grated Parmesan cheese for topping

    Prepare the Potatoes: Wash the russet potatoes thoroughly to remove any dirt. Leave the skin on for extra crispiness, and cut each potato into wedges, about 8 wedges per potato.

      Make the Herb Mixture: In a large mixing bowl, combine minced garlic, dried oregano, dried thyme, smoked paprika, sea salt, black pepper, and olive oil. Mix well to create a flavorful herb oil.

        Coat the Potatoes: Add the potato wedges to the bowl with the herb mixture. Toss the wedges until they are evenly coated in the garlic and herb oil.
