Ingredients

2 medium zucchinis, grated

1 teaspoon salt

1/2 cup crumbled feta cheese

1/4 cup grated Parmesan cheese

1/4 cup all-purpose flour (or gluten-free flour)

2 large eggs

2 tablespoons fresh parsley, finely chopped

1 teaspoon dried oregano

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Olive oil, for frying

Lemon wedges, for serving

Instructions

Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth, and sprinkle it with salt. Let it sit for about 10 minutes to draw out excess moisture.

Squeeze Out Moisture: After 10 minutes, gather the towel or cheesecloth and twist it to squeeze out as much liquid as possible from the zucchini. This step is crucial for crispy fritters!

Mix Ingredients: In a large mixing bowl, combine the squeezed zucchini, crumbled feta cheese, grated Parmesan, flour, eggs, parsley, oregano, garlic powder, black pepper, and red pepper flakes (if using). Stir until well combined. The mixture should be slightly thick and hold together.

Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. To test if the oil is hot enough, drop a small amount of the mixture into the oil; it should sizzle immediately.

Form Fritters: Using a tablespoon, scoop the mixture and gently flatten them into patties (about 3 inches in diameter) before placing them in the skillet. Make sure not to overcrowd the pan; cook in batches if necessary.

Fry: Fry the fritters for about 3-4 minutes on each side or until golden brown and crispy. Adjust the heat as necessary to avoid burning.

Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb any excess oil.

Serve and Enjoy: Serve the crispy zucchini fritters warm, garnished with a sprinkle of fresh parsley and lemon wedges on the side for drizzling. They pair wonderfully with a yogurt dip or a simple side salad!
