Ingredients

1 can (15 oz) of chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cumin

1/4 teaspoon cayenne pepper (adjust to taste)

Salt to taste

Freshly ground black pepper to taste

Optional: 1 tablespoon nutritional yeast for a cheesy flavor

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Chickpeas: After rinsing the chickpeas, use a clean kitchen towel or paper towels to dry them thoroughly. The drier they are, the crispier they'll get!

Season the Chickpeas: In a large bowl, combine the chickpeas with olive oil, garlic powder, smoked paprika, cumin, cayenne pepper, salt, and black pepper. Toss until the chickpeas are evenly coated in the oil and spices.

Spread on Baking Sheet: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure they have enough space between them to allow for even cooking.

Roast the Chickpeas: Place the baking sheet in the preheated oven and roast for 20-30 minutes, stirring every 10 minutes to ensure even browning. Keep an eye on them after the 20-minute mark; you want them golden brown and crispy, but not burnt!

Add Nutritional Yeast (Optional): If you’re using nutritional yeast, sprinkle it over the chickpeas in the last 5 minutes of roasting for an extra flavor boost.

Cool and Enjoy: Once crispy, remove the chickpeas from the oven and let them cool on the baking sheet for about 5 minutes. They will become even crunchier as they cool. Serve them as a snack, in salads, or as a topping for soups!
