2 medium zucchinis (about 2 cups grated)

1 teaspoon salt (for salting zucchini)

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 large egg

2 green onions, finely chopped

2 cloves garlic, minced

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for heat)

Oil for frying (olive oil or vegetable oil)

Prepare the Zucchini: Grate the zucchinis using a box grater or a food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth. Sprinkle with 1 teaspoon of salt and let it sit for 10-15 minutes to draw out excess moisture. After the time has passed, twist and squeeze the towel to remove as much liquid as possible.

    Mix the Batter: In a large mixing bowl, combine the squeezed zucchini with flour, Parmesan cheese, mozzarella cheese, egg, chopped green onions, minced garlic, black pepper, paprika, and cayenne pepper (if using). Mix until well combined.

      Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. To test if the oil is hot enough, drop a small amount of the batter into the oil—if it sizzles, it’s ready.

        Cook the Fritters: Using a tablespoon, scoop the zucchini mixture and carefully lower it into the hot oil. Flatten each fritter slightly with the back of the spoon. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Avoid overcrowding the pan; you may need to work in batches.

          Drain: Once cooked, transfer the fritters to a paper towel-lined plate to absorb any excess oil.
