1 cup all-purpose flour (or gluten-free flour)

1 cup plant-based milk (e.g., almond or soy)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup panko breadcrumbs

½ cup buffalo sauce (or to taste)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Celery sticks and ranch dressing (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare Flour Mixture: In a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually stir in the plant-based milk until the mixture is smooth and well combined.

      Coat Cauliflower: Dip each cauliflower floret into the flour mixture, allowing any excess to drip off. Ensure that they are well-coated.

        Add Panko Crust: Roll each floret in the panko breadcrumbs, pressing lightly to ensure they adhere well. Place the coated florets on the prepared baking sheet.

          Spray with Olive Oil: Drizzle or spray the coated cauliflower with olive oil to promote crispiness during baking.

            Bake: Bake in the preheated oven for 20-25 minutes, turning halfway through, until the cauliflower is golden brown and crispy.

              Toss in Buffalo Sauce: In a large mixing bowl, combine the crispy cauliflower with the buffalo sauce, tossing gently until each piece is well coated.

                Final Bake: Return the sauce-coated cauliflower to the baking sheet and bake for an additional 5-10 minutes to allow the sauce to caramelize slightly.
