1 cup buttermilk (or plant-based milk + 1 tbsp vinegar for vegan option)

1 cup panko breadcrumbs

2 tablespoons olive oil (for drizzling)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: Rinse the cauliflower florets under cold water, then dry them with a clean towel. Ensure they are completely dry to achieve maximum crispiness.

      Make the Batter: In a large mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cumin, cayenne pepper (if using), salt, and pepper. Gradually add in the buttermilk, stirring until a smooth batter forms.

        Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it's thoroughly coated. Let the excess batter drip off before moving on to the next step.
